Wakame, cucumber and sesame salad

The most direct way into wakame: it rehydrates in cold water alone and turns silky, barely saline. Cucumber brings freshness; sesame, a toasted note.

Ingredientes

  • 15 g whole-leaf wakame (or 2 tbsp flakes)
  • 1 cucumber
  • 1 tbsp toasted sesame seeds
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp soy sauce
  • 1 tsp honey (optional)

Preparación

  1. 01Rehydrate the wakame in cold water for 8–10 min, until it unfurls. Drain and cut into strips.
  2. 02Slice the cucumber thinly, salt lightly and rest for 5 min. Drain off the water it releases.
  3. 03Whisk the sesame oil, vinegar, soy sauce and honey.
  4. 04Toss the wakame with the cucumber and the dressing. Finish with sesame on top.

With flakes there is no need to soak as long: 3–4 min in cold water is enough.
