Potatoes in their own water

The water the wakame soaks in is not thrown away: it comes out salty and mineral, and the potatoes boil in it. The seaweed, chopped, goes into the vinaigrette.

Ingredientes

  • 10 g dried wakame
  • 500 g small potatoes
  • 2 tbsp olive oil
  • 1 tbsp vinegar
  • 1 tsp honey
  • Pepper

Preparación

  1. 01Rehydrate the wakame in cold water for 5 min. Strain and keep the water.
  2. 02Boil the potatoes whole in that water, skin on.
  3. 03Meanwhile, chop the wakame and mix it with the oil, vinegar and honey. Let it sit for 10 min.
  4. 04Halve the potatoes while still warm and toss with the vinaigrette.
